Beach stone substrate

I'll be setting up a 125g in the spring and was thinking about having a beach stone substrate. Is this a good idea? Would fish waste and food debris get stuck and build up in between the stones, there will be 2 Oscars in the tank? The stones in question are 1-2" wide and very smooth. Would a common pleco do alright on a substrate like this?


The stones look like this. (obviously I would just be using the smaller stones)

I would only cover 2/3 of the tank or you could do the entire tank, but keep it only one stone deep so that cleaning is easier. These are nice and they turn dark grey in the water.
