I am currently raising 6 red spot Severums in hopes of getting a pair, I have a 75 gallon tank which they will be going in as adults, since they will most likely be breeding is there any way I can put more cichlids or schooling fish in the tank without having aggression, or over crowding/stocking?

A 75 is honestly too small even for a pair, IMO. You run the risk of the male turning on the female and shredding her if you keep them alone.

If you want to keep stuff with them, it would need to be deep bodied tetras or something like that. I wouldn’t mix them with other cichlids because the severums will become aggressive and take over the entire tank when they spawn.

For reference, here are some Heros pairs dominating 6’ tanks.

No.
And that would be about the minimum for a pair too. I had a "Breeding" pair of edit: Homosexual gold severums and they terrorized other another severum, plecos, basically everyone in a 115 gallon tank.

Would a small school of Buenos Aires tetras be good? If I upgraded to a 125 long would it be possible for silver dollars?

Personally, I would stick to BA tetras over SDs. Silver dollars are like bottomless pit pigs and a huge bio-load due to eating like pigs. They'll eat your severum eggs before the sevs can even realized it has happened.

Okay, now what would be a good bottom feeder for a 75 gallon for now? I was thinking of rubberlip plecos but I’m open to any other suggestions
