Crayfish with no claws help

It will depend. Feed your cray well and it will regenerate quicker. They typically start to grow new claws that will still be soft and not really functional. The next molt the claws will be larger and hard, and will work a little. The following molt the claws will be almost normal size.
 
Younger crayfish (which mount more frequently) grow back claws quicker than adults .
Make sure there is plenty of calcium available
