My young kelberi peacock bass would only eat bloodworms. I tried to train them to eat shrimp and pellets, but they would just watch them float by. I tried the pellet training method in the sticky too but it's been a week and still no luck.

Last night, I got some cut up shrimp and let a cube of bloodworms melt over it. Then I put a few melted bloodworms over the shrimp and dropped it into the tank. All my pbass ate the shrimp and the BW instantly. I'm trying it with small pellets right now and it seems to be working too.

So if you're having trouble getting your young peacock bass to eat shrimp, put some thawed out bloodworms on it and they'll eat the shrimp and the bloodworms all in one bite. I think with young fish you have to trick them sometimes into eating food you want them to eat by wrapping it around food they already like.
