It's my grandma's pond. Just finished expanding it. Now it's around 20 metres in length, 10 metres width and 1.5 metres depths.

Yes, I'm in thailand. In winter, the worst it could get in my province is 66°F.

The largemouth bass is territorial but I would think a gar may work but temperature may be too low for a Florida gar.

Maybe, but this temp is for the worst scenario and rarely reach that temp. If we're talking about common temp in the winter in the province I live in is around 74-75°F.
