So I recently got a little oscar that had been labeled as albino at my lfs but later found out he might be a lutino instead.

When I got him, he was perfectly white except for a black trim at the end of his/her fins but as time goes on, he keeps getting darker. Is this normal behavior/peeling for lutinos?

He is super active and eating like a hog otherwise - really enjoying his personality. Hes always swimming next to my baby severum.

In any line bred fish there is a possibility to revert to back to a few, maybe even more of its normal characteristics.
Breeding true over time is a relative thing.
Lutino, gold, or long fin are not different species of oscars, they were simply selected by breeders for certain traits, so it is possible for some individuals of a spawn to revert to some natural characteristics. In many cases if normal characteristics are noticed early enough, these are culled to maintain the line, but some color changes may not show up until later, after the fish have been released to LFSs.
This not only applies to oscars, but for any line bred fish from koi, to guppies, to EBJDs, to Glo-fish.
