My last experiment trying to grow lemon grass as an emergant from the tank waters was a bust, it tended to rot away after a few weeks.
My newest attempt is mini-ornamental-pineapple, that is native to Taboga, and grows wild here

It's been in the tank a couple weeks so far, with no sign of rot yet, and the fruit (a tiny pineapple, about the size of a plum) appears to be growing well.
The roots dangle just below the waters surface, near the outflow from the sump, propped up on a submerged log.
A word of warning- the spines on the leaves, can be treacherous if grabbed or even brushed against
Another plant I've been attempting to grow from the surface is the Codiaeum variegatum (AKA Garden Croton), it is native to Oceana, but the island I live on, is filled with invassive plant species, so it just grows feral here. Much like Dieffenbachia, it is considered toxic, but cichlids seem to know that, and don't bother eating it.
The Croton in the tank is propped up on a thick Dieffenbachia stem.
