So I read that Oscars need a flat surface to breed. Like a tile or a slate. One of my Oscar pair is all set to breed but I don't want them to until I relocate the other fish into a different tank.. Which is still setting up. I know their intention because one tiger pair took over one corner of the tank, cleared the stones, one was cleaning the area vigorously while the other was guarding it very aggressively.
So I blocked that corner with a river rock to avoid any aggression.
Will the female go ahead and lay eggs any which ways? Without a flat surface? Or will they not mate?

Oscars will put eggs on rocks, logs, the tank glass, a sunken toy truck, or as you suggest, a tile.
If they are ready, they will breed, the only way to stop them may be to separate them.
And if a female is gravid, putting off the spawning may kill her. Unless egg bound females can get rid of the eggs, it is, often fatal. Two females will also breed together, producing infertile eggs, in order to rid themselves of eggs.
