Anyone familiar with this stuff? Does the fact that it's water based mean that it's going to come apart after long term exposure to water?

What do you want to use it on?

it's good stuff really.

Minwax® Polycrylic® Protective Finish is a crystal clear, fast-drying protective topcoat for use over bare wood, oil- and water-based stains, paint and wallpaper. It has very little odor, is non-flammable, cleans up easily with soap and water, and can be recoated in only 2 hours. Minwax® Polycrylic® resists damage from abrasion, scuffing, chipping, water, alcohol and other common household chemicals.
Minwax® Polycrylic® is not recommended for use on floors.

I'm actually using it on several things right now. I'm really just wondering if it's even waterproof. It's definitely bonding to my surfaces but I'm worried that since it's water based, being underwater even after it's cured it might come apart.

So you plan to submerge what you did in polycrylic? because yes it is only water-resistive not proof.

You can get 2 part epoxies, homedepot sells a 'everfix epoxy resin' 2 parts. I've heard it's good for tanks, clear of course. You could even spray paint watever color you like the epoxy it to seal it shut.

Check out this guys paludarium construction. He is using the 'everfix epoxy resin' in this article heck he even liquid nailed his foam together and then sealed it with the epoxy to no ill effects.
