Made a bunch of these chicken parm sandwiches yesterday. On a diet, and these are under 500 calories each, so this is my dinner for the next week or so. Probably the most simple meal prep I've ever prepared, just butterflied some chicken breasts, breaded them, air fried them, put marinara on top and melted cheese over it. On a brioche bun of course. Bun got a little burnt, I'll do 4 minutes next time.

When i have the time and motivation i have found some success with alfredo, vodka, carbonara sauce. I always augment my sauces with excessive garlic--usually a whole head for one batch and also plenty of marjoram and wine. Always parmigiano reggiano too, cant abide no cheap parmesan.
Update from the last time I wrote here:
I tried to cook homemade Alfreo sauce and you know what? It turned out delicious and beyond my expectations. I stole your tip which you mentioned:
"I always augment my sauces with excessive garlic--usually a whole head for one batch and also plenty of marjoram and wine."
I can't say it was an easy Alfredo sauce recipe(I hope I won't be considered a bot), but anyway, I did my best.
I'm not used to taking pics of the food I cook, but I will try in the future.

Attempted my first ever crawfish boil. Only time I’ve had it was at a buffet in North Carolina about 10 years ago. I would say it turned out quite well. Will add the potato at same time as crayfish next time.

Made a nice ribeye and a lobster tail with it that I split with the misses. Butcher had a special on so figured we’d have a feast of a meal.
