30 gallon cichlid tank?

Yeah a 30 should do. I've never seen one get over 5-6 inches.
 
I really think you have not given the Senegal Bichir enough thought!
They are only about 6 bucks at PetsMart, and are SO FUN to watch eat. One word: YOMP!

Who doesn't love a dragon?

Rainbow cichlids are pretty cool if you can find them and they stay small. There are more options than just convicts and rams.

Gold Piranha (for a year or so then you want a 40 breeder +)

it will need a 125gallon when it out grow the 30gallon...
 
well id say you should do some rams if you dont want firemouths, convicts or anything else..german blue rams are nice and get like about 4 inches.. but if your gonna upgrade from the 30 to at least a 40 gallon you could do a electric blue jack dempsey..since there slow growers..
