If it's not just super stressed, it'd be leucistic. (a condition in which there is partial loss of pigmentation in an animal resulting in white, pale, or patchy coloration of the skin, hair, feathers, scales or cuticle, but not the eyes. Unlike albinism, it is caused by a reduction in multiple types of pigment, not just melanin.)

Xanthic Esox Lucius, caught and released in 2017 WI. i do believe this may be the 1st xanthic with black eyes recorded. Amazingly beautiful specimen! Talked with the guy who caught it a bit. Came from a wild river population with no stocking program. Life finds a way....
