The eggs are premature in the first one that I opened and come out as one skein. Those are good for salmon because they're all attached and stay as a glob on the hook after being cured. A fish with single eggs like the second one is easier to put in roe bags or nylons that we use for sturgeon fishing. If you don't put them in nylons/roe bags they'll fly off the hook when you cast or other fish will pick them off the hook while waiting for sturgeon to bite.
