If it the 2nd most dominant fish, this may be why the "hump" has lessened.
Humps are due to dominance status and can grow or shrink with status., they are a liquid and fat filled sack, controlled by hormones, that react to the particular individual status in a community.
Any other cichlid (whether same species or not) as long as it is more alpha, can cause the hump to disappear from other cichlids in the tank.
As far as color, in your new pic, it looks good to me, but color is also affected by dominance.
If you want it to hump out, it should be in a tank with no other cichlids, or at least much less robust ones.

I have to agree with everyone else with what affects color and nuchal hump for the most part.

I will also note that from past experience, they will also change colors depending on their mood and especially if you change the color of the substrate or background.

I changed my white sand to black years ago and while some of my fish changed coloration a little (some didnt at all) my GT at the time looked like an entirely different fish.

I agree with the above, all cichlids have a chameleon-like ability to adjust coloration to habitat, mood, and other factors such as feeding, or spawning. And in many photos in magazines or the net cichlids are presented in breeding color or other times when they look best.

Above is a normal color for Andinoacara coerleopunctatus (very close cousin to your G.T.)
When in a feeding frenzy they present dark bands (below) a shoal en-masse attacking a shrimp.

And when in courting or in breeding color cn also change into different color
