I used to keep a colony of all male GTs and there was always one with super sized hump. As soon as I removed the super humped male, I could see the next male in line humped up within 24 hours. Another way to induce big hump is to throw in a female, then multiple males would hump up and kill each other.
I believe all CA/SA humps are plastic, including Geophagus, Midas and hybrid FH that I have kept. Not many Africans have hump, but for the few I have kept (Frontosa, Moori ), their humps seem to be permanent. Tell me if you have different experience.
Some GTs (and FH ) don't develop hump at all, regardless of age and mood, and wild caught GTs don't develop bigger hump than line bred.
