You do have to keep in mind that the majority of fish keepers will not purchase a large fish. Sure fish that large are always kept at a LFS because it would be something that someone "might" be interested in. But if you think the price is there to reflect how much food the LFS has to feed it, not because it's a fish that's timid and beautiful. So they are trying to compensate on feeding the fish rather than trying to make a buck.
You can buy a $3-5 baby oscar which will get large within a matter of months. Why purchase one that is already at a large size, unless you are already in acclimation of a large tank and have decently large fish in that tank, and looking for a tank mate that will not be dinner.
