I would surround the tank with with lighter colors gradually and add some giant danios as dithers to help him feel more assertive.

My fh is in a very bright room.. and its 7 inches. It would quickly kill the Danios..
 
my guess it it maybe a sudden environment change. like replacing or taking out decoration, changing the subtrate, stuff like that. when i first got my flowerhorn it was very stressed out like up to a point where if i had a black background it will blend in. and the second time was when i removed the gravels. it wouldnt eat and the third time was when i got a blood parrot. almost end up ripping it to shreds. but even after all that i gave it some privacy. and no light. it started to adjust to it and how the color is all out and attacks my pleco. so even though it doesnt look that great give it some time and im sure it will all come together. GL :)

oh and one more thing try not to bug it too much or else it gonna jump out and shoot missles at you. LOL. (it was a joke cheer up)

When the lights are off, it freaks out when I approach. If the lights are on, its semi okay.. its cautious when I apporach and then it charges at me when it see's my hand.
 
Cover up the entire tank with newspapers and then slowly open 'em up after two days. That should work. Try to gain his confidence back. Also, try moving him into a darker room. Keep us updated.
 
I have had this problem with fish just not FH. 1 thing is that you have a bowfront tank. Ever looked in a funhouse mirror? That is what you look like to your fishes. I have a wave front/ bowfront tank, so one 1/2 magnifies the fishes (bowfront) and the other magnifies me (wavefront) So not only is he not seeing you correctly you look scary as hell. I also found that if my scared fishes are in an area that doesnt get much foot traffic it takes a lot longer for them to get over their wussyness. Is there anyway to put it in a more high traffic area?
