Just set up the new 180 gallon tank, fish are a bit stressed, but what do you think? Recommendations ???

Currently I have two fx5's on there, however with the gravel their is a lot of dead spots, any suggestions for that? Also my driftwood is tainting the water golden, is this at all bad for the fish?

I think your good on the set up. Looks like you have 2-3" of gravel spread out in the tank which is fine. Just keep up on the gravel vacs when your changing the water. The tannins won't bother the fish over time with water changes the tannins will dissipate.

Do you think artificial plants may look good, or should I just keep driftwood in it?

Wood all day long! there are some nice artificial plants out there you can add in to give yourself some visual appeal.
Plus, its your tank do what you like :) :)
