Twitching?

So i have been doing daily water changes of about 50 gallons using Seachem Prime and Stability. This morning my test strips came in. I’ve lost all the fish basically at this point all I have left are three blue acara. Very sad and disappointed. I’m not even a beginner fish keeper it’s just been years since I have had to set up a fully new tank I’ve always had tank and filter medium from other tanks so that’s why I figured two weeks would suffice but I was wrong I’m guessing. Ammonia still spikes consistently and it’s probably not cycled yet so I will probably end up losing the acara as well. Not sure what else to do

Ich is basically gone at this point I midicated for 6 days and slowly raised temp to 86. Keeping temp at 86 for one more week. Daily gravel vac.

If you had an ammonia reading of 2 ppm, it means your tank is "not" cycled, and that what ever starter you used, did not do the job.
2 ppm ammonia will cause the fish to twtich due to toxicity, and possibly die, to save them daily 50% water changes may be in order to dilute it.
The pH test is not important at this point.
If and when, the ammonia finally goes down and stays down, you will need to test for Nitrite, and do the same amount of daily water changes until it disappears.
Once nitrite disappears on its own, your tank is near being cycled.

so I’ve been doing water changes for the nitrite but it’s still staying high should I just keep doing these water changes? What else is there I can do?
 
A normal full cycle can take up to 2 months.
And if, as I suspect (your bottled bacteria wasn't viable, (it could have been compromised in some unknown way)and did't quite take) you will need the full time to get the process done.
And if you tinkered with it, in some way, prolonging it, may have been a possibility.
The ammonia part of the cycle can take a month, and the nitrite part can take another month.
