I always specify "extra crispy" when ordering scrapple anywhere mainly for this reason. Mushy is no good.
I don't mind a little mush on the inside but it's got to have a crispy crust on it.Growing up poor,we ate a lot of scrapple sandwiches and Habberset has always been the brand of choice.

Well i guess you probably know the right spots. I lived in delaware county for 3 years. I never saw a bowl of grits...or biscuits with gravy for that matter. Seemed all the diners i stopped at always had that salty chipped beef and toast instead.

At any rate shrimp and grits is a fine meal. I just got back from savannah where its practically an art form.
Anytime you have leftover fish, fish and grits is great too! Local delicacy here on NC coast. Sometimes, I let them cool, cut them into small rectangular patties. Then saute' them in a little butter. Add seasoning salt and cayenne pepper to taste. Leftover fish on top. A nice over easy egg on the side.
