Azul is a seperate species.. There is a gold color morph of it at least which has more of a gold background color rather than the azul's more greyish background.
Things like fogo are a morph. And then within each species as they come from different rivers they can change in appearance a little. Which is why you have regular mono's which aren't so hot and then you have San Fracisco mono's which are

The azul was recently (within the last year) described as a brand new species, Cichla piquiti. This is why you don't see it on many, if any, ID charts out on the web. From what I have seen, there are a few different variants of azuls, including the gold ones, based on the location they were collected as well. This seems to have become pretty common among all of the species of pbass.

In regards to the Sao Francisco Monos, I think that this fish is really the newly described C. kelberi.
I suspect that when is all said and done there will be additional species described beyond those already listed. Fogo's may end up a distinct species.
