The best tasting is a toss up. Freshwater: Walleye or crappie get my vote SW: depends on the mood and what I catch fresh.. Wahoo, dorado, grouper, flounder, snapper. It's all pretty good.

I have caught some big ones over the years.
3 1/2ft by 3 1/2ft Cownose ray in Punta Gorda, Florida on light line (12-15lb test. I know because earlier one that was fought for 5 mins was tired out and broke off because I reeled too hard.) There is no existing igfa jr record for this species so when I go down next year I'll just have to catch another one. Also on my agenda for the flats next year: Eagle Rays, Stingrays, Seatrout, Redfish, Snook, Jack Crevalle, small Sharks.
I recently landed a 12 1/2 inch Bluefish on a local pier. It was on a "test-cast." No bites all day (except when I set out a baitfish on the surface and each time Terns swooped in and stole them.) I tied on a heavy Luhr-Jensen Krocidile. One the first cast I hooked something that took line for about a second then started coming in. It even jumped.
12 1/2 inch LMB on a creme nightcrawler at Clove Lake.
About 2ft Searobin on the side of a highway in the Rockaways on a Bunker Chunk. Our Ft. Tilden Striper thing was cancelled (we made reservations a week early and we didn't know till we got there.) worse, my friend, an ameutuer fisherman was there. Eagre to start I told my Dad to pull over. He did. I caught the big Searobin (What a fight!) and my friend caught HIS FIRST FISH another big Searobin! (Not as big as mine tho.)
.
(different trip.) A couple Keeper Fluke but all went free. :)
A BIG Black Seabass that my Dad kept because it came up dead.:(

heres an 8 ft+ white sturgeon caught in the columbia gorge, thats a 10/0 hook in its mouth! the other pic is the bait i use to catch em. its alot of fun filling coolers full of shad in the summer and then using them to fill coolers full of crabs in the winter and hunting oversize in the columbia. this size sturgeon requires a fight belt and a strong back they love to jump and rip line, anyone who wants to experience fighting the biggest freshwater game fish should plan a trip to the columbia, besides sturgeon you could find yourself into some pretty big salmon and steelies, heck even walleye run these waters!!!!

Finally I found this pic… This was my first surf fishing trip. I caught this bad boy in San Mateo at Coyote point right on the pier. I was using a 12ft ugly stick and braided line (don’t remember the Tess). The bait was squid. It was really cool. The pier was about 8 or so feet up off the water and made up of large bolder like rocks. I was in the water no longer than 10 minutes when my bait running reel when nuts. It was just buzzing and buzzing the line was going and going…
I have never caught anything larger than a 20 inch striped bass so this one caught me off guard. I stood on the top of the bolder and set the hook. The next thing I knew I lost my balance and started to fall into the drink. I grabbed my pole holder and regain my footing, then I brought this guy in. 44 inch leopard shark. I practice catch and release so I let the guy go. Hope you like it.
