There isn’t a huge difference between a 75 and an 80 - not one that would make a difference in terms of size.
A red bay snook would get far too large for that size tank.
You could potentially keep a solo grammodes cichlid in that size tank, but it is pushing it (a 125 would be better).

I wouldn’t do an oscar in a 75 - they are capable of getting as long as the tank is wide. Additionally, they produce so much waste you’d have to be doing large daily water changes just to compensate and keep it alive.
Any cichlid added should not hit greater than 8 inches.

Malawi cichlids are definitely an option, with them you are creating a community rather than getting a solo predator though (with the exception of some predatory haps). I don’t have a strong knowledge on the rift lake cichlids, so I would leave it to others to comment on them specifically.
