How large in an aquarium setting have you seen shovelnoses grow?
18" or so in a 225, long term captive but not mine. I would expect 24" if they are well kept, even in the wild a 24" fish is considered big but odd speciems do get past 30" or more. Shovelnose aren't continuous swimmers and spend much time just resting on the bottom similar to a channel catfish...

Hey where would I be able to order one? Would they be fine in 72-77 temp the entire year ?
Oh yeah, shovelnose do well in warm water and are considered a warm water fish, not tropical, but warm water. This is something people get mixed up quite often, temperate fish have fish that do well in warm water and tolerate cold temps and fish that do well in cold temps and will tolerate warm temps, usually for short periods of time then you have fish that need cold water all the time and fish that only do well in warm water all the time. Shovelnose are warm water fish for the most part and need warm water to do well but probably need cold water to breed. many temperate fish are like that. Where i live summer water temps get so high, blood temps, you can get overheated while swimming but the fish still need winter weather to breed.

Osage Catfisheries Inc is the source... $45 each is the tentative price not $80
I was expecting a lot higher, that's a great price!

Biggest I've seen was about 30 inches, most captives I've seen seem to be about 15-20 inches, fish of about 25 pounds have been caught.

A thread for the care of sturgeon.
Oh hey check this out!

can you just make a thread on these for any fish and have it pinned or something?
If a thread is of sufficient quality, addresses a subject not previously covered or is in need of an update, and is properly sourced, then yes. I strongly encourage people to write these threads.

I've only gotten one or two things pinned, I leave it up to the mods to decide wether anything is worth pinning
This needs a bit of fleshing out to be sticky worthy, but I am happy to help you get it there with edits and the like if need be.

I've been working with Osage since about 2010. They are WONDERFUL people, I can't say enough about them.

I spoke to Osage a little while ago, and they told me that it'd be illegal to ship Shovelnose to California, but I cant find and am not aware of any legislation that states so. Is this true?

Sturgeon need a deep large stable pond. They need plenty of oxygen and good food they can get to. Also they tend to get stuck in folds of liners. False economy buying small ones as they can be starved and hard to save.
