Hehe. In the recipe I found you add 1/4 teaspoon of baking soda to kill any alcohol.

i don't think the baking sode 'kill the alcohol' but rather the alcohol creates an acidic evviroment and the baking soda helps buffer this making the yest live loger. Never tried it myself

I will make a new batch this weekend and see if it lasts longer because of this buffering.
