Most (?), me included, consider the thread by Fugupuff (= Wesley Wong of Rare Fish, CA) I linked for you in my original thread, and his info as an authoritive, trustworthy piece. I hope he will chime in to address your question about distinguishing sub-adults and adults.
 
From what I'm seeing, you simply have a fish that is NOT deformed, unlike most caps. Caps tend to be quite spooky and run into the edge of the tank, giving them the damage. Your fish is just in it's true, wild state.
