I think the main theory on coloring is exposure to sunlight. Personally I think it may just come with age because all the fish that are gold are huge. I've yet to see a dorado that big in captivity, and who knows how old those dorado are

The first pic says salmonus franciscanus and is big but not massive, again the others aren’t massive but all show some wicked gold.

This is the biggest one I can find in captivity (Youtube). Looks nothing like the ones in the wild.
