the fish is a dorado. We pay about 20x more to keep it in an aquarium then to have it on a dinner plate down here.

Been working like a maniac lately, so the crock pot has been putting in work while I'm at work. This iteration of braised short ribs, flavored with absinthe among other things, is probably my tastiest yet.

I recently bought my first smoker. A PitBoss 850CS1. Opted for digital electric as I enter into the smoking game to take the guesswork out of the cooking.
Fired her up last week for the first time with some baby back ribs. For my first go I was happy, with room for improvements
