we don't get places around here that do the actual cheese curds, most places just give you the options of melted Cheddar Mozzarella or American. Must be a Canadian thing - what kind of cheese do you guys use and what kind of gravy?
they use that "squeaky cheese" stuff up there, its like a mix of moz and cheddar (from what I've heard, I've never had legit Canadian poutine)

Yeah that is fairly accurate aha. Most places do use a mozzarella cheese curd that makes a slight squeak as you eat it, that is for most fast food chains. Other places like ski resorts I've found mostly use graded marble. Gravy will be different depending where you go but it's usually a brown gravy.
