Been a while since seeing one. I’m on the lookout for one myself.
With cichlids, common fish you can try are blochii, sun cat, Asian USD cat, larger synos are some examples off the top of my head
As far as the bolt catfish, you may want to try and reaching out to some vendors, they'll be able to tell you if they may be able to get them.

Tbh imo it will end up being a headache. The cichlids for the most part are aggressive eaters. Cats do have the large appetite but the question will be can they get to the food fast enough ? My jags beating out half blind polypterus for food is no great accomplishment. Through trial and error ive found that herbivorous cichlids do much better with predators like cats and what not.
Maybe a few lima shovelnose ? But again im concerned with the cichlids

Imo if i could get my hands on a bolt i would make that the center piece of this tank and work my stock around him.
None of us on this thread has kept bolts except

Only info we can provide would be based of others accounts. I guess 12 to 13 inches maybe
Not kept enough to know for certain in aquaria. Tbtb probably has the largest estimated around 15" I believe.
