I actual practice I agree with you Animal, but food-fish farmers know that water quality is THE key issue relative to growth rates. If it was possible to keep a small tank in pristine condition you'd be surprised how large a fish will grow. However, factors such as stress, muscular atrophy, etc. come in to play as limiting (or eliminating) factors.

The obvious water quality challenges in "real life" are the real culprits. I've had large dovii and umbees foul hundreds of gallons of water in just a few days. Preventing that in a small tank AND being able to address it in a way that isn't stressful to the fish just isn't feasible.

Like most things, nothing in fishkeeping occurs in a vacuum. So as we find it in real life, a large tank makes a huuuuuuge difference.
