what is the rarest African Cichlid that is kept in captivity? I guess you could say the most sought after too?

There are alot of cichlids from Africa that just are not imported for various reasons. Not sure that answers your question.
Albino Cyrichromis leptosoma "kitumba" is pretty rare.
Albino tropheus are even more rare.
Both will run close to 100 each for adults.
Blue Zaire frontosa run more than that, but not rare.
Hard to say what is sought after in your question.
I'm sure Electric Yellow labidochromis are still near to the top of requests and sales due to bright color, but that does not make them rare, even though they are sought after.
Most cichlids that are "rare" are one's that people don't even know about, so therefore, they are not sought after.

I gave examples of 2 rare in the hobby african cichlids that are somewhat pricey.
I gave examples of 2 popular thus sought after cichlids, one pricey the other cheap.

There are probably a lot more that are rare then we realize...I have a very rare Lake Victoria species, Prognathochromis Perrieri. These are extinct in the wild and very few people even have them in the country. Depending on if that is what you are into they are rare and sought after by vic keepers. There are quite a few very rare highly sought after vics. I really don't know of the others as vics are more my thing.
isn't one of the lakes drying up, causing many species to become endangered or even extinct? I heard one of the major african cichlid source lakes is in trouble ..... maybe rift? or was it vic?
Another apecies that hasnt been seen in the wild since 1999 is the Copadochromis Fire Crest Mloto although a small population is being kept in captivity
It is important to never overcook any fish, including African cichlids, but I do not know that I would just go with rare. Maybe slightly past that.
Also with africans it depends on who your importer would be if your looking for wild caughts. Also it depends on your area i know for a fact that in some areas certain fish are very common and in others they are rare.
